Inspired by the natural wines of Italy and Georgia, which are aged for extended amounts of time on the skins of the grapes. Expect a unique aroma of tropical fruit, gummy bear, and earthiness, followed by a light, prickly acidity on the tongue.
6.4% alc/vol, IBU 20, SG 1.048, FG 1.000, SRM 3
To begin this brew, we hand-crushed Muscat grapes and let them spontaneously ferment before adding them to a fresh mixed-ferment farmhouse ale. This mixture, including grape must and skins, was aged for 20 months, then blended with a portion of sour blonde ale (which had aged for 18 months on its own!) The result is a beautifully complex beer with layers of flavour that pay fitting homage to the wines that inspired the recipe. Further proof that good things take time.
